A New Technology For Producing Lemang (1988)

:: SYNOPSIS

Research and development to modernize the production technique for lemang has been carried out to replace bamboo and firewood during the preparation and cooking processes. Specially made stainless steel tubes and an electrical oven were developed and have been successfully used to produce lemang. Using the modern method, lemang can be cooked using a specially designed heating oven that cooked lemang in 2 hours. The heat required to cook the lemang can be from burnt LPG or using a heating element that can be automatically controlled using a thermostat. At the moment, the largest capacity oven is capable of cooking 25 lemang per batch. This machine has been used for commercial production of lemang by several entrepreneurs.
